What's for dinner? Creamy cheesy chicken enchiladas!

These are by far the best chicken enchiladas I have ever tasted. I brought them to a family party and they were loved by everyone, young and old. If you are looking for an easy meal that is sure to please your taste buds, look no further!

Ingredients:
1 tbsp butter or margarine
1 can tomatoes and chilies, drained
1 pkg (8 oz) Philadelphia cream cheese, cut up and softened
5 dl (2 cups) chopped, cooked chicken breast
8 flour tortillas
5 dl (2 cups) shredded cheese (chose your favorite)
4 dl (1 pint) whipping cream
A little bit of Taco spice mix

Optional:
Salsa (whatever kind you like)
Salad

Directions:
Preheat oven to 175 degrees C (350 F). Grease a baking dish that will fit your 8 enchiladas . Melt butter in large skillet over medium heat. Add the tomatoes and saute for 1 min. Stir in cream cheese and chicken and cook, stirring constantly until cream cheese melts. I prefer to add some Taco spice mix just to make it a little bit more spicy. Add about 1-2 dl of the shredded cheese. If the mixture feels very thin you can thicken it slightly with some Maisena (corn starch). Spoon 2-3 tablespoons of chicken mixture down center of each tortilla. Roll up tortillas and place seam side down in the greased baking dish.
Now comes the fun part: Sprinkle with the rest of the cheese, and drizzle with whipping cream

Cover with foil and bake at 175 degrees (350 F) for 30 min. Take off foil and cook for another 15 minutes, or until top is golden brown.

I serve them with some salsa. It's also a good idea to prepare a green salad to go with it. After all we need to have some vegetables to "cancel out" all that whipped cream and cheese - see my previous post about self-deception;)

Some might say that one enchilada is enough for an adult. Not in our house! Every time I have served these, people have two, even the kids. So my recommendation is to prepare two enchiladas per person. They are THAT good!

Oh yeah! Liker disse vi også, men skal sannelig prøve de ut med Philadelphia ost - det har jeg ikke prøvd før. Herlig å kunne dele oppskrifter på denne måten.

Måtte le da du skrev at du er selverklært spanofil. Jeg er nok det jeg også skjønner du. vi storkoser oss hver gang vi er der. Har lyst til å reise tilbake med en gang. Jeg har ikke prøvd Barcelona enda og den byen bare MÅ jeg til!
